  Frozen food has also to be well kept and has expiry dates which must be complied with. Consumers would not know how long the food has been frozen. There is also a special taste to frozen food if it is kept too long or gone rancid, so restaurants must have strict compliant to quality if using frozen foods.


  SO what is the big deal? I have a freezer at home full of food, defrost it and cook or re-heat. Why is there such a fuss about it?


  I feel that for higher end restaurants. The disclosure of frozen food is important. This is because the key selling point from these tier of restaurants is quality. By using frozen food, they are abusing this factor which does not deliver the quality of food they are supposed to. I feel that this is important when it comes to vegetables and meat.
